Makar Sankranti 2023: year 2023 Festivals have started. The holy festival of Makar Sankranti will be celebrated across the country on 15 January 2023. This festival marks the beginning of the harvest season. As soon as the sun starts moving north and enters Makara Rashi, also known as Makar in Hindi, the days start getting longer. Some of the highlights of the festival of Makar Sankranti include flying kites, wearing yellow clothes and enjoying sweet and savory dishes with the family. Food is an essential part of Indian festivals, so today in this article, we will share the traditional easy-to-prepare recipes for the festival of Makar Sankranti, which you can make at home. So this time make the festival of Makar Sankranti even more special.
Khichdi
Ingredients needed to make Khichdi- 1 cup rice, ½ cup moong dal, ½ cup toor dal, 1 tsp turmeric, 1 tsp cumin, ¼ tsp asafoetida, 1 bay leaf, 1 dry red chili, 1 black cardamom, 1 cinnamon, 4 black peppercorns, 4 cloves , 1 onion, 1 tomato, ¼ cup peas, ¼ tsp garam masala, 2 tbsp ghee and salt.
Way-
Wash rice, moong dal thoroughly.
Put them in the cooker along with 4 cups of water, add turmeric and salt as per taste.
Cook the khichdi on medium heat till 4-5 whistles.
Heat ghee in a pan. Add asafoetida, cumin, bay leaf, dry red chili, black cardamom, cinnamon, black pepper and cloves, let them cook for a minute.
Now add chopped onions and fry for two minutes.
Add finely chopped tomatoes and cook for two more minutes.
Now add peas, salt as per taste and ¼ cup of water, cover and cook for 5 minutes.
Put cooked khichdi in this mixture and add water as per your choice.
Finally, mix garam masala and serve.
Gur Halwa
Ingredients needed to make jaggery pudding- 1 cup wheat flour, 1¼ cup jaggery, 1 cup ghee, 10 cashews and 10 raisins.
Way-
In a pan, add crushed jaggery along with 3 cups of water. Keep it on medium-high heat and let it boil. After a boil, boil for two minutes and turn off the flame.
Now heat ghee in a pan and add wheat flour to it. Mix well and fry the mixture.
Keep stirring continuously, otherwise the mixture may burn.
The color of the mixture will turn beige to light brown, this process will take at least 8-10 minutes.
Now add jaggery water to the roasted ghee-flour mixture and keep stirring continuously so that lumps do not fall.
Cook the halwa for 1-2 more minutes, the halwa will leave the sides of the pan.
Garnish the jaggery halwa with cashews and raisins and serve.
Til Laddoo
Ingredients needed to make sesame laddus- 1½ cup sesame seeds, 1 tbsp ghee, 1¼ cup jaggery and ½ tbsp cardamom powder.
Way-
Put sesame seeds in a pan, dry roast them on low flame, stir them continuously and roast them.
When the color turns golden, take out the seeds in a bowl.
Heat ghee in the same pan and add jaggery.
Allow the jaggery to melt completely and mix well.
When it comes to a boil and the color darkens slightly, add sesame seeds and mix.
Keep stirring the mixture till the mixture starts leaving the sides of the pan.
Now let the mixture cool down a bit and mix it in cardamom powder.
Break small balls from the mixture and make laddoos.
